But when I flashed my V3 about 6 moths ago, I found nothing on any Chinese website although I got plenty of stuff (including Chinese versions) on some US sites. It seems that V3 has now quickly become very popular in China....

THe process is actually not that easy. You have to find and install some tools (MPT etc.) in a PC for changing the firmware in the phone. The process may introduce some bugs. So you may further need to manipulate the values in SEEM to fix them.. It may cost you days to finish the job. So it may be wise to let others to do it for you...
